We all are super busy and sometimes don't have time to make intricate meals. These simple dishes will make you wonder what to do with all the extra time on your hands.
All Day Muffins
Ingredients: 3 cups of all purpose baking mix, 2 cups Cheddar cheese, 10 3/4 oz Cheese soup, 3/4 cup water, 1lb of sausage Directions: 1. Cook sausage in skillet, drain. 2. Mix all ingredients in bowl and put into muffin tin with wrappers and bake at 375. 3. If you want a little kick you can add a tbsp of chili powder or top with dried red pepper flakes. Source
Falafel
Ingredients: Can chickpeas, small onion, cumin, salt, egg Directions: 1. Mix together in food processor, form into patties or balls, then bake in a hot oven or fry them. 2. Cheat and use some bread crumbs or flour to help bind them if they’re too wet. 3. If feeling fancy, mix some tahini with lemon juice, garlic, salt, and yogurt if you feel like it to thin it out for a dipping sauce. Good falafel needs no pita, but is happy with it. Source
Pancake de Delicioso
Ingredients: 4 eggs (3 only whites, 1 w/yolk is my favorite), 1 spoon of brown sugar, 1/3 banana chopped up, 1/2 cup oatmeal (that 1 minute stuff) Directions: 1. Whisk the ingredients in a bowl 2. Heat up a buttered skillet on medium. 3. Pour mixture onto skillet. 4. Flip the thing like a pancake. Enjoy your $1.50, 15g of protein, heart healthy, tasty breakfast. Source
Grilled Spiced Chicken Wings
Ingredients: 8 chicken wings (about 1 1/2 pounds) (halved through the joint), 1 teaspoon olive oil, 2 teaspoons seafood seasoning (such as Old Bay), 3 tablespoons unsalted butter (melted), ranch dressing (for dipping) Directions: 1. Heat grill to medium. In a large bowl, toss the wings with the oil and 1 teaspoon of the seafood seasoning. Grill, uncovered, turning once, until cooked through, 15 to 20 minutes. 2. Meanwhile, in a large bowl, combine the butter and the remaining teaspoon of seafood seasoning. Add the wings and toss to combine. Serve with ranch dressing for dipping. Source
Quinoa Salad
Ingredients: Quinoa, Garbanzo beans, finely diced tomatoes, diced green onions, olive oil, salt and pepper Directions: 1. Boil the quinoa until it sprouts, then mix all the ingredients. Even better – put a scoop or two in a warm tortilla with a slice or two of avocado, add salt. Takes maybe 15 minutes, you can make maybe 12 tacos with this, total cost – $15. Two tacos will be pretty filling. Source
Amazing Pizza Dough
Ingredients: 1 1/2 cup of self rising flour, 1 cup of natural Greek yogurt Directions: 1. Mix that shit up, put it on a pizza tin and cook at 400 for 35 min. or until golden brown. The first time I made it I just put some olive oil and spices on there and it was amazing. Source
Brownie In A Mug
Ingredients: 2 tbsp flour, 2 tbsp sugar, 1 tbsp cocoa powder, 1 tbsp walnut oil (vegetable works too), pinch of salt, 1.5 tbsp water (doesn’t count as an ingredient) Directions: 1. Mix until ingredients are combined. Do not overmix. Chocolate chips & nuts in the mix are optional. 2. Microwave for ~1 minute (time varies based on microwave). Enjoy a warm brownie! Source
Pepper Cheese Puffs
Ingredients: 1 Red Bell Pepper, 8 oz Cream Cheese, 1 cup shredded chedder cheese, 1 pkg Puff Pastry, 3 tbsp melted butter Directions: 1. Preheat oven according to puff pastry package recommended settings. Dice the bell pepper in a food processor, drain excess water. 2. In a bowl, combine cream cheese, chedder cheese, and diced bell pepper bits. This is your filling. 3. Roll out puff pastry dough (may have to dust it with flour). Cut each sheet into 9 squares using the folds as a guide. 4. Place 2 tbsp of filling into each square. Lightly wash the edges of the puff pastry and fold into a triangle. Press firmly and crimp with fork to make sure there are no large air pockets inside. 5. Coat each triangle with a layer of melted butter. 6. Spray baking sheet with non-stick spray. Place triangles on sheet approximately 2-3″ apart. 7. Remove from oven when golden brown (approximately 8-12 min). 8. Let cool for 5 minutes (cheese can be extremely hot) Enjoy. You have been warned. Hummus and Cucumber Crostini
Ingredients: 12 large bagel chips (preferably “everything” flavor), 1/2 cup hummus, 1/4 English cucumber (thinly sliced), 1 tablespoon olive oil, kosher salt and black pepper Directions: 1. Dividing evenly, top the bagel chips with the hummus and cucumber. Drizzle with the oil and season with ΒΌ teaspoon each salt and pepper. Source
Mexican Grilled Corn With Cilantro
Ingredients: 2 ears corn (shucked and each cut into 6 pieces), 1 tablespoon olive oil, kosher salt and black pepper, 1/4 cup chopped fresh cilantro, 1 teaspoon fresh lime juice (plus lime wedges for serving) Directions: 1. Heat grill to medium. In a medium bowl, toss the corn with the oil and ΒΌ teaspoon each salt and pepper. Grill, uncovered, turning occasionally, until tender, 10 to 12 minutes (reserve the bowl). 2. Transfer the cooked corn to the reserved bowl and toss with the cilantro and lime juice. Serve with lime wedges. Source
Flaky Tomato and Mozzarella Tart
Ingredients: all-purpose flour (for the work surface), 1/2 sheet puff pastry (1/4 of a 17.3-ounce package), 1 cup grape or cherry tomatoes (halved if large), 4 ounces grated mozzarella (1 cup), 1 tablespoon olive oil, kosher salt and black pepper Directions: 1. Heat oven to 425Β° F. On a lightly floured surface, roll the puff pastry into a 9-by-6-inch rectangle. Place on a parchment-lined baking sheet and refrigerate until firm, at least 30 minutes. 2. Prick the puff pastry all over with a fork and top with the tomatoes and mozzarella. Drizzle with the oil and season with Β½ teaspoon salt and ΒΌ teaspoon pepper. Bake until golden brown and cooked through, 20 to 25 minutes. Cut into pieces before serving. Source
Shrimp With Ginger Sauce
Ingredients: Apricot preserves, Grated fresh ginger, Kosher salt, 1 pound large shrimp Directions: 1. In a small saucepan, cook ΒΎ cup apricot preserves, 1 tablespoon grated fresh ginger, and ΒΌ teaspoon kosher salt over medium heat, stirring, until melted, about 2 minutes. 2. Place 1 pound peeled and deveined large shrimp (about 16) on a rimmed baking sheet, drizzle with 3 tablespoons of the apricot sauce, and season with ΒΌ teaspoon each kosher salt and black pepper. Broil until browned in spots and opaque throughout, 3 to 4 minutes. Serve with the remaining sauce. Source
Caprese Salad
Ingredients: Tomatoes, Mozzarella, Basil, Olive Oil, Finishing Salt Directions: Slice tomato on plate. Sprinkle with salt (and pepper if you want to cheat and use 6 ingredients). Slice fresh mozzarella and put on top of tomato. Chiffonade basil and sprinkle on top of mozzarella. Drizzle with Olive Oil. Source
Potato Latkes
Ingredients: 3-4 Potatoes (shredded, best with skin left on), Egg, Green onion (finely chopped), 1/2-1 tsp, Garlic powder, Lightly salted butter Directions: 1. Squeeze excess moisture from shredded potatoes, and place potatoes into a mixing bowl. Begin heating a frying pan at medium setting. 2. Break egg over shredded potatoes and mix well. 3. Add finely chopped green onion and garlic powder and mix until evenly dispersed. 4. Drop butter onto the pan to evenly coat it, and drop three tbsp of the mixture onto it. 5. Flatten out quickly and fry on both sides until crispy. Best served with apple sauce or sour cream. Or even shred some cheddar on top afterwards and bake until melted. Source
Cabbage and eggs
Ingredients: Cabbage, Eggs, Olive oil, Soy Sauce, Pepper Directions: 1. Heat a nonstick with a bit of olive oil. Add chopped/sliced cabbage. 2. Cook until the cabbage starts wilting and picks up a bit of color. Add a little bit of soy sauce (teaspoon or two). 3. Beat a couple eggs. 4. Once the soy reduces a little bit (like a minute), add the eggs and scramble and add pepper. You get this really silky salty awesome egg and cabbage combo. Sounds vile, tastes amazing. Source
Burnt Black Molasses Ribs
Ingredients: Ribs, 1 bottle of red win, 12 cloves of garlic, black molasses, brown sugar Directions: 1. Butter in pot, toss in chopped garlic, pour in the full bottle of red wine, add molasses, add brown sugar, add chopped ribs. 2. Simmer for about 2-3 hours with lid on. after that, check if fork tender. 3. if yes, pull ribs out and they will be juicy and full of that sweet red wine. if not, cook the rest of the way with lid off. You also have a ridiculously amazing sauce after the fact. Source
Banana Bread
Ingredients: Browned Bananas (about banana bread ripeness), chocolate chips, quick oats, peanut butter, add whatever else you would like Directions: 1. mash up bananas in a bowl 2. add approx. 1 cup of quick oats for about 3-4 medium sized bananas (consistency should not be dried from the oats, but not runny) 3. stir in chocolate chips, peanut butter, add other ingredients (i.e., sugar, honey–my favorite, pinch of salt, etc.) 4. place spoonfuls on greased baking sheet, do not spread out 5. bake at 425 degrees until they appeared glazed over/browned. Cherry Pineapple Cobbler
Ingredients: 1 can of cherry pie filling, 1 can of crushed pineapple in heavy syrup, 1 box yellow cake mix, 2 sticks of butter, Crushed pecans (or other nuts) Directions: 1. Layer the pineapple across the bottom of the cake pan, cover with cherries, layer that with the whole box of cake mix (dry). 2. Slice the butter in thin layers and lay across the entire top. 3. Sprinkle on the nuts, stick that bitch in the oven at 350 for 50 minutes-ish and prepare for the mouthgasm. Source
Stuffed Mushrooms
Ingredients: 1 pack of Whole mushrooms, 3 tbsp of cream cheese cream cheese, 1 cup of bread crumbs, 1/2 cup of parmesan cheese, chopped up garlic clove. (or 1/2 if thats too strong) Directions: 1. Pop the stems off the mushrooms chop em up & flip the caps over like little cups. 2. mix everything together 3. put the cheesie paste goodness in the caps 4. Bake at 350 f for about 20-25 min. Done. Sh_t can be done in 1 bowl and it’ll make you seem fancy as f*_k. You can also add onion power, cayenne powder, chilli powder, peper, etc. if you want to screw around with spices. Source
