Jalapeño Poppers

Ingredients
- 12 fresh jalapeños
- 1 cup shredded cheddar cheese
- 1 cup shredded Swiss cheese
- 8 ounces softened cream cheese
- salt and pepper to taste
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 cup all-purpose flour
- 3 large eggs
- 1 cup plain dry breadcrumbs
Supplies

Directions
Using a paring knife, cut a slit lengthwise in each jalapeño. Carefully remove the seeds. Leave the stems on the chilis in place.
In a medium bowl, blend the cheddar, Swiss, and cream cheese until smooth.
Add the salt, pepper, onion powder, and garlic powder to the cheese mixture. Mix thoroughly.
Gently fill each jalapeño with cheese mixture, pressing the seams together to close the pepper.
Set out 3 small bowls. Place the flour in the first bowl. In the second bowl, lightly beat the eggs using a whisk. Pour the breadcrumbs into the third bowl and add salt and pepper to taste.
One at a time, dip the jalapeños in the flour mixture and then the egg mixture, letting the excess drip off. Finally, coat each jalapeño with breadcrumbs.
Repeat the coating with flour, egg, and breadcrumbs to form a second layer on each jalapeño.
Preheat your oven to 350 degrees. Spray a baking sheet with a nonstick cooking spray. Place the jalapeño poppers in the oven for 25 minutes or until golden brown. Serve warm. Enjoy!

Diet-Friendly Variations

Vegan
Substitute vegan-friendly cheese from brands such as Kite Hill or Daiya for the regular cheese and VeganEgg for the eggs. Check the label to make sure your breadcrumbs are vegan. Panko is usually vegan, but use discretion.
Gluten-Free
Substitute gluten-free flour for the all-purpose flour, and choose gluten-free breadcrumbs like these.
