Hearts of palm are reminiscent of artichoke hearts but have a more delicate, slightly lemony, sweet flavor, making it the ideal blank canvas for introducing other flavor profiles.

Hearts of Palm Pasta

Ingredients
- 2 cans hearts of palm
- 6 slices of bacon
- 2 cloves of garlic, minced
- 1/2 cup parmesan cheese
- 3 eggs
- salt and pepper, to taste
Supplies
- medium bowl
- whisk
- saute pan
- paper towel-line plate
Directions
Drain and rinse your hearts of palm. Slice the hearts of palm into the same length as noodles. Then peel and mince the garlic. Set aside.
In a medium bowl, whisk the eggs until the yolks and whites are blended. Add the parmesan cheese, salt, and pepper to taste. Set aside.
Dice the bacon into bite-sized pieces. In a saute pan, over medium heat, fry the bacon until desired doneness. Turn the heat to low, and remove bacon to a paper towel-line plate reserving the bacon grease.
Add the sliced hearts of palm and the minced garlic to the saute pan with the bacon grease. Stir to coat.
Pour in the egg mixture, continuously stirring. The egg mixture will warm and become creamy. However, if you stop stirring, you risk the eggs scrambling, losing that delicate creamy texture. If you notice your eggs are beginning to scramble while you’re stirring, immediately remove the pan from the heat. Your dish is complete when the egg mixture thickens and resembles a cream sauce. Stir in your bacon, sprinkle with extra parmesan cheese and top with parsley. Serve immediately. Enjoy!
