Ingredients
- 1 head cauliflower, about 8 cups (cut into bite-sized florets)
- 1/4 cup olive oil
- salt and pepper, to taste
- 1 cup heavy cream
- 2 ounces cream cheese (full fat), softened
- 1 1/2 teaspoons Dijon mustard
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/4 teaspoon garlic powder

- 8×8-inch or 11×7-inch baking dish
Directions
Preheat the oven to 450 degrees.
Cut the cauliflower into bite-sized florets, about 8 cups. Rinse the florets in a colander and then dry.
Spread the cauliflower florets onto a baking sheet and toss with olive oil, salt, and pepper. Roast for 15-20 minutes or until the florets are golden and fork-tender.
