Ingredients
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- pinch of salt
- 1 large egg
- 1 1/4 cups buttermilk
- 2 tablespoons melted butter
- 1/4 cup sugar
- 1 teaspoon pure vanilla extract
- butter for spreading
- pure maple syrup

Directions
In a large bowl, sift together the flour, baking powder, baking soda, and salt. Set the bowl aside.
Using a whisk, beat the egg in a medium bowl until it is light in color and frothy. Add the buttermilk and whisk until well combined.
Add the egg-and-buttermilk mixture to the flour blend. Stir until the batter is completely smooth.
Add the melted butter, sugar, and pure vanilla extract to the batter. Blend well.
Coat a large nonstick skillet or griddle with cooking spray and place it on medium heat.
Using a ladle, scoop 1/4 of a cup of batter onto the skillet or griddle. Use the back side of the ladle to spread the poured batter into a 5-inch circle. Cook until bubbles appear on the surface of the pancake and the edges start to brown.
Using a silicone or plastic spatula, carefully flip the pancake and cook the other side, about 2 minutes. Repeat the process until you have prepared all of the batter.
Top your pancakes with a pat of butter and a drizzle of pure maple syrup. Serve immediately.
