- 1 can Ro-Tel diced tomatoes and green chilis

- 1 medium yellow onion, finely chopped

Directions
Cut the block of Velveeta cheese into 1-inch cubes using a chef’s knife. This will speed up the melting process.
Add the Velveeta cheese, Ro-Tel diced tomatoes and green chilis, salt and pepper, cilantro, chili powder, cumin, and yellow onion to a crockpot, cover, and cook for 2 hours on low or until the cheese is completely melted.

You can make a version of our Velveeta queso dip with only two ingredients. Cut a 16-ounce cube of Velveeta cheese into one-inch cubes and grab a can of Ro-Tel diced tomatoes and green chilis.
