One Pot Creamy Cajun Pasta

Ingredients
- 2 1/2 teaspoons smoked paprika
- 1 1/4 teaspoons oregano
- 1 1/2 teaspoons salt
- 1/2 teaspoon red chili flakes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1 pound boneless, skinless chicken breast
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 yellow onion, diced
- 1 red pepper, diced
- 1 poblano pepper, diced
- 8 ounces uncooked fettuccine
- 1 (10 ounces) can diced tomatoes
- 2 cups chicken broth
- 4 ounces cream cheese

Directions
Wash and dry produce.
Prepare your Cajun seasoning; in a medium bowl mix the smoked paprika, oregano, salt, red chili flakes, garlic powder, onion powder, cayenne pepper, and black pepper.
Cut the chicken breasts into 1/2 inch cubes. Place the cubed chicken in a bowl with the Cajun seasoning. Stir to coat the chicken.
In a large pot, heat the oil and butter over medium-high heat. Add the chicken and cook two minutes on each side. (Note that the chicken will continue to cook with the pasta.)
Add the onion and peppers to the pot and sauté until soft, about 3-5 minutes.
Next, add the pasta, can of diced tomatoes and chicken broth to the pot, stir to combine. Allow the chicken broth to come to a boil. Once boiling, reduce the heat to simmer and cover with a lid. Cook for 10 minutes.
After 10 minutes, add the cream cheese. Stir until the cheese has melted. Serve and enjoy!
