What You’ll Need
- large non-stick skillet or griddle
- non-stick spray (like Pam)
- spatula
- colander
- measuring cups

- fruit & veggie wash or spray
Ingredients
- 1 tbsp brown sugar
- 1 1/2 cup all-purpose flour
- 1 tbsp granulated sugar
- 1 tbsp baking powder
- 1 tsp vanilla bean paste
- 1 tsp salt
- 1 cup whole milk
- 1 egg
- ¼ cup club soda
- 4 tbsp butter, melted
- 1 lemon
- ½ cup fresh blueberries
- maple syrup
Instructions
Step #1: Prep the Fruit
Rinse the lemon and blueberries in fruit and veggie wash (we recommend Rebel Green Fruit & Veggie Clean, available at Target, Walmart, and local health food stores). The most effective method is to place them in a colander under running water and rotate until adequately rinsed. Then, carefully zest the lemon until you get about 2 tsp of zest. Set aside.
Step #2: Dry Ingredients
Add the sugars, flour, baking powder, and salt to a bowl. Whisk until combined.
Step #3: Wet Ingredients
In a different mixing bowl, combine milk, butter, egg, club soda, and vanilla bean paste and whisk until smooth.
Step #4: Batter Up
Slowly pour wet ingredients into dry ingredients, stirring until no longer clumpy. Add the lemon zest and blueberries and stir once more.
Step #5: Griddle Master
Heat your skillet or griddle to medium heat. Spray with no-stick spray. Pour about ¼ cup of batter for each pancake. Cook for about two minutes, then flip and cook for two more until golden brown. Repeat this step until batter is gone.
Step #6: Taste Test
Serve immediately and enjoy! We love to add some maple syrup for additional sweetness.
Cooking Notes
If a healthier pancake is your aim, substitute whole wheat flour for the all-purpose flour, and skim milk for the whole milk. If dairy-free pancakes are in your wheelhouse, change the butter to melted coconut oil, and the milk to a dairy-free milk option.
