For ease on weeknights, we like to start with a pre-made crust. Trader Joe’s has a great low carb and gluten free option with their Frozen Cauliflower Crust. Another good choice is Trader Joe’s Fresh Sprouted Whole Grain Crust. Amazon has a “just add water” Vegan crust too.

Vegan Caprese Pie
Ingredients
- 4 cloves of garlic
- 2 heirloom tomatoes
- balsamic vinegar
- olive oil
- 1 ½ cups vegan Mozzarella
- salt and pepper
- 1/3 cup fresh basil chiffonade
Instructions
Step #1: Crispy Crust
Bake crust according to package directions. While cooking, thinly slice the tomatoes and mince the garlic. Then, remove crust from oven.

Ingredients
- 1 cup plain or garlic hummus
- ½ cup fresh spinach
- ½ cup cherry tomatoes
- ½ red onion
- ½ cup artichoke hearts
- 2 tsp dried Italian seasoning
- salt & pepper

Bake crust according to package directions. Remove from oven.

While the crust is cooking, thinly slice red onions, halve the cherry tomatoes, and rough chop the artichoke hearts. Set aside.

Spread hummus onto finished crust, then top with vegetables. Add Italian seasoning and salt & pepper. Bake at 350 degrees for 18 minutes.

Vegan Nacho Pizza Pie
Ingredients
- 1 ripe avocado
- 1 tbsp lime juice
- bunch fresh cilantro
- 1 red bell pepper
- 1 jalapeno
- vegan sour cream
- 1/2 cup textured vegetable protein
- 2 tbsp taco seasoning
- 1/2 white or yellow onion
- 1/4 cup water
- 1 tbsp avocado oil
- salt and pepper
Instructions
Step #1: Crispy Crust
Bake crust according to package directions. While cooking, julienne the bell pepper, slice jalapenos and onion, and rough chop cilantro. Set aside, and remove crust from oven.
Step #2: Taco “Meat”
Put the water and TVP in a bowl for about 5 minutes to let hydrate. Heat avocado oil over medium-high heat in skillet. Add onion, then saute for a couple minutes until fragrant, stirring occasionally. Mix in TVP, taco seasoning, pepper, and jalapenos and continue cooking for 5-7 minutes, stirring often. Set aside.
Step #3: Other Toppings
Smash avocado on crust and drizzle with lime juice and salt and pepper. Add nacho “meat” and seasoned veggies. Garnish with fresh cilantro and a dollop of vegan sour cream.
