For all you sushi lovers out there, you need to try this take on a breakfast sushi. While it doesn't include anything you would normally find in sushi like rice and fish, it does include some American breakfast staples that are just as good, if not better. This breakfast sushi is made with an egg, cheese, jalapeno and tater tot mixture all wrapped in a layer of bacon strips. This yummy breakfast dish was created by Tym Bussanich and we're pretty sure it's going to become one of our favorites. The best part is, it's super easy to recreate at home so you can have breakfast sushi every day.
For the Breakfast Sushi you'll need:
10 strips of bacon
2 cups tater tots
1 1/2 cups cheddar cheese
1 jalapeno pepper
2 eggs
3 tooth picks
3 BBQ sticks
To make this addicting breakfast sushi, mix together the eggs, tater tots and cut up jalapeno in a bowl. Next lay a large layer of tin foil on the counter and make a bacon weave on top of the tin foil, placing BBQ sticks at the end to hold the bacon in place.
Spread the tater tot mixture over the bacon evenly, leaving about 2 inches on one end of the bacon weave untouched. Then spread your cheese evenly on top of that.
With the help of the tin foil, wrap the bacon weave into a roll. Use the tooth picks to make sure the bacon wrap is secure. Put on a cookie sheet, removing the tin foil before baking. Bake at 375 degrees for 45 minutes or until the bacon is fully cooked. Once it is done cooking, take out and slice into sushi rolls. Enjoy!
