Who doesn't love a gooey, crispy grilled cheese sandwich? It's such a simple combination, but it just works to make one of the most delicious treats that you can sink your teeth into. Sadly, those of us trying to eat healthier might be avoiding this indulgence, but thankfully there's a way to make the grilled cheese healthier — switch the bread out with a cauliflower crust!
Start by ricing one head of cauliflower (cut into florets) in your food processor. Once done, move the cauliflower to a bowl and microwave it for about 8 minutes, then put the riced cauliflower into a tea towel and squeeze out as much moisture as you can. Mix the dried cauliflower with 1 egg, 1/2 cup shredded mozzarella, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Once mixed thoroughly, form the dough into patties the size of bread slices, and place them onto a greased baking pan. Bake at 450 degrees for about 16 minutes.
Be sure you let the cauliflower crusts cool for about 10 minutes before you use them, then make grilled cheese as you normally would. Butter one side of each crust, place cheese in the middle, and cook both sides on a pan over medium heat.
